All rights reserved.The enzyme Lipases (triacylglycerol acyl hydrolases) catalyze the hydrolysis and synthesis of esters which were composed of glycerol and long-chain fatty acids. The use of lipases is increasing due to their non-toxicity and environmentally friendly properties against other synthetic catalysts. Nowadays, new generation applications of enzymes have been introduced in many industrial sectors including food, chemical, pharmaceutical, cosmetic, perfume, fuel, cellulose, and cleaner production. The importance of lipases, which are obtained by simple, fast, sensitive and specific enzyme purification methods and capable of sustainability in extreme conditions, is increasing daily. Lipases are obtained from various natural sources such as bacteria, fungi, animals, plants and algae. In this review, it was mentioned that mainly plant sources which are produced lipase enzyme and its major application areas.
