Survival and growth of Yersinia enterocolitica and Aeromonas hydrophila in yogurt were investigated. Four lots of yogurt were prepared to contain these microorganisms separately at different inoculation levels. Yogurt samples were refrigerated at 4 +/- 1-degrees-C for 26 d. Numbers of microorganisms, as well as pH values of yogurt samples were determined at appropriate intervals, while Y. enterocolitica survive until the end of the storage, A. hydrophila was completely inhibited after 5 d of cold storage.
